CHICKEN LO MEIN
Ingredients-Chicken thighs, salt, white pepper, cooking wine, soy sauce, cornstarch, ginger, nutmeg, sugar, chicken bouillon, white cooking wine, oyster sauce, eggs, flour, Kale, carrots, onion, red bell, yellow bell.
CHICKEN MARINADE
½ Tablespoon Soy Sauce
½ Teaspoon White Pepper
½ Teaspoon Ginger
½ Teaspoon Nutmeg
Pich Sugar
¼ Teaspoon Baking Soda
1 Tablespoon Cooking Wine
½ Tablespoon Cornstarch
1 Tablespoon Cooking Oil
2 Tablespoons Honey
SAUCE
½ Cup Water
½ Tablespoon chicken Bouillon
2 Tablespoons Soy Sauce
2 Tablespoons Oyster Sauce
2 Teaspoon Sugar
1 Tablespoon Cooking Wine
¼ Teaspoon White Pepper
1 Tablespoon of cornstarch
VEGETABLE SUGGESTIONS- Add what you like *** are what we use
Thinly sliced carrots *
Onions ½ inch*
Bok Choy
Cabbage
Broccoli
Kale*
Mushrooms
Sugar Snap Peas
Bell Peppers*
Water Chestnuts
Snow Peas
Celery
Zucchini*
Bean Sprouts
Baby Corn
Egg Plant
Green Onion*
NOODLES
12 oz standard spaghetti Noodle
Additional Seasonings
3 tablespoons minced garlic
1 Teaspoon minced ginger
INSTRUCTIONS
1- Mix all marinade ingredients in a bowl with chicken, make sure chicken is completely coated and set in fridge covered
2-In a separate bowl mix the sauce ingredients stir well and then set aside
3-Cook noodles al dente and set asideÂ
4-Chop Lo Mein Vegetables and set them on a tray I place them on the tray from firmest to softest this makes it easier to add to wok later.
Prepare additional seasoning set all this aside in a bowlÂ
5-To cook chicken heat pan or wok on high with 1 tablespoon oil, once hot add chicken from fridge. Once chicken is cooked completely remove from the pan and set aside.
6-In the same pan, set the stove to medium heat once heated, add garlic and ginger (Additional Seasonings) cook for 30 seconds or until you can smell the garlic, add your vegetables.
Remember add them individually, letting the firm first then the most tender. This gives the vegetables that need it time to cook a little longer . This process can take 3-4 minutes depending on your vegetables.
7-Add everything back into Wok noodles first then stir for 1 minute, add chicken then pour sauce stir for 2-6 minutes or until sauce is thick and coats noodles then turn off heat Â
Your dish is ready to serve!
